I wanna take a photo of a roller coaster like the one shown here but i don't know how to? Its in three places at once?

It was stitched...he mentions something about correcting a stitching error on a handrail.

An alternative to that, would just be to take three shots...each when the coaster is in a different place. You would want the camera to be in the same position for each shot, so use a tripod. Then, when you have three shots...layer them in a program like Photoshop. Then simply erase or mask the layers in a way that lets all three positions of the coaster show through. I can't tell for sure but the photographer probably took pictures of portions of the scene and then stitched them together in Photoshop or other software. This method is often use to make paranomic images.
Yeah:
Final image adding blue sky, correcting stitching error on hand rail, overlaying 3 coasters, removing bin, tinting water, artificial sun, lens flare and tidy up. Second process includes colour correction and cropping ( Not shown on this version ).
It looks more like a fisheye lens to me. Notice the distortion in the foreground? That's classic lens distortion.
