I'd have to say it depends on how you define a rock star, since the media seems to call everyone from Ozzy Osbourne to Eminem (yes, I actually did see him referred to as a "rocker" before) rock stars. But, if you're meaning the actual rock/heavy metal musicians, like others said, the headswinging is called headbanging, and it's a rock thing, it's a good way to release pent up energy, and it's also a way to show how into the music you are.. But with the screaming, there are alot of rock/metal singers who don't scream, and for the plenty that do, some of them use it to show emotion in a song, whether it be pain, anger, or sadness. Some do it just to scream, and some do it because it works well with the song(s).
