I pick it up now and then and practice for a week. It feels like my fingers can't get far enough apart to hit the right places, or close enough together in some cases. Doesn't seem to be improving. Am I asking too much too soon, or am I just going to fail anyway? Will I be able to move my fingers farther apart eventually?
just keep practicing. I was the same way. I haven't played in a year or two... but you'll get the hang of it.
You are asking for too much too soon. I started guitar at age 48 and managed to hack it, though I'm not as good as I'd like. Your avatar suggests you're much younger and your fingers will be more supple.
You don't learn to play guitar with seldom practicing. If you are no more interested in learning the guitar than you indicate... then pick another hobby.

But you might also try the bass or learn to sing... there are so many guitarists out there and so few really excellent rock bassists/singers.

Should I give up on learning the guitar?
No, why should you?! Playing an instrument is a fun thing to me. Eventually, you will be good. There are people that become pros in 15 years and there are also people that become pros in 1 year just as good. You will play good in time, as long as you practice and maybe get a teacher..
Take guitar lessons to really give it a shot. Then maybe decide after if it's right for you. Some guitar places even offer trial lessons to see if you like it before you pay them for weekly/daily lessons.
