For keeping the menu open after click, set hideOnClick:false. For the submenu part, see this thread (http://extjs.com/forum/showthread.php?p=65383#post65383).
It's probably similar to the above post.
I have a menu with several checkbox items. I'd like to be able to select / unselect without the menu closing each time.
